I create unique, colorful cheeses handmade with a belief that creativity and quality are the foundations of artisanship. My philosophy is simple: use time-tested methods to craft award winning cheese while building strong relationships. You may enjoy each cheese in the collection knowing that it was truly made with passion.

def: ARTISAN - An individual with combined abilities of creative artistry and disciplined craftsmanship. Until the 17th century, art referred to any skill or mastery and was not differentiated from crafts or sciences.

 

With a focus on collaboration, I’m proud to present my signature project. Made in small handcrafted batches and inspired by my home: Washington State.

Reserve

■ Small batch

RESERVE - an extra-aged farmstead cow’s milk cheese with small tyrosine crystals. This cheese is a new hybrid between Dutch and Italian styles. The curds are rinsed with cold water before being formed into large wheels, contributing terroir from the heavy rain in the Puget Sound. The first batch was made on Halloween 2019 which makes these densely flavorful wheels over 2 years old. This is a fine example of the pristine results made possible with the Pacific Northwest sun, air, and animals.

Charcuterie boards, ham sandwich, or a healthy protein packed snack

Pairs Well With:

Crisp white wines, fruity Reds like Malbec, or kombucha


 
 

Bonneville

★ Award winning

BONNEVILLE - a decadent double cream wheel, washed in Syrah over several weeks as it reaches maturity. Savor the aroma of the grapes as you bring this cheese to your lips, giving you a taste of Dubrul Vineyards Estate wine from Cote Bonneville. This vineyard is special to Daniel because it was planted in 1992 the year he was born, and in his hometown within the Yakima Valley. The extra cream is added to an already rich milk, lending to the fudgy texture and deep yellow color. This cheese is a cheese for every occasion!

Pairs Well With:

Spicy reds like Syrah, but also Chardonnay or cider

Use in:

Fruit and cheese plates, atop crostini with baked apples, topped with a little honey

 

Fuego

✓ Partner favorite

FUEGO - a chile-infused, hand-rubbed cheese featuring Jalapeno and Scotch-Bonnet peppers throughout. To add a kick of flavor, the rind is rubbed with crushed red jalapeno powder in the “enchilado” style, giving its signature bright red color. Daniel works closely with the Guerra family of gourmet chefs to source the hottest of their signature dried Natural Seasoning from their chile pepper garden in the Yakima Valley – an area known for its fertile agriculture.

Mexican Lagers, Mezcal, iced tea.
